In order to to make your first batch of delicious homemade yoghurt, we will require a few ingredients. First and foremost we will require fresh milk.
Milk
No matter if you’re looking for a dairy free, vegan or a standard milk options, we’ll go through all of the options to fit all of the taste buds out there. When using cow’s or goat’s milk make sure you get the pasturaised variant, or in case of raw milk, that you have preheated it to minimum of 70 degrees celsius. This step will make sure to eliminate the possible harmful bacteria while still preserving most of the nutrients. Should you go for a vegan/dairy free option, there are a few of our favorites. Starter Culture
Now that we’ve covered how to choose and prepare the milk, it’s time to spark our fermentation process with some friendly bacteria. This step requires either fresh cultured yoghurt or a yoghurt starter culture. Keep in mind that some brands of yoghurt have been pasteurized after the fermentation, so choose the ones that will be higher quality, preferably organic and with a longer fermentation time. When choosing the right starter culture you may go with different bacteria selection, all of which will have different benefits. For example the kefir strain will have both friendly bacteria and yeast which will increase it’s potential health benefits, whereas the L Reuteri strain will be beneficial for certain health issues as well as optimal wellbeing. The bottom line is, no matter which strain of friendly bacteria you go with, keep in mind to choose either a cultured yoghurt with live bacteria as a starter, or packaged yoghurt starter culture. Remember, the bacteria might be dormant for a long time, which does not mean they will not flourish again as soon as the environment is right.
